On Monday, we were invited along to the sheep farm to partake of "sweet polenta" - polenta dolce - which is made from chestnut flower rather than the usual polenta made from Miaze flower. Presumably the former is more ancient than the latter, since maize was introduced from the New World, whereas the sweet chestnut has been cultivated in the valley for a thousand years. Now I think sweet polenta with boiled pork bones is just a nostalgic meal to be partaken annually ...
(An odd quirk is that the hot polenta is served out using not a spoon or knife, but rather a specially made wand of chestnut wood bent into a curve. This is then drawn down into the mixture, and pulled to the edge of the board and plopped onto a waiting plate ...)
